Markholt has been in the meat business for about 30 years, partnering
in his family's business, the Meat Shop in Tacoma, before moving to Mossyrock
with his wife Sona 12 years ago. At their custom meat cutting shop, they
cure hams and bacons, using only a natural curing method. Once they get
their retail license, they will sell natural and organic meat products.
Their goal is to offer a clean supply of meat, raised locally, naturally,
and in an ethical manner. They want to provide an outlet for farmers to
sell their products and stay on their Lewis county farms, and encourage
any farmer meeting that criteria to contact them.
